Sweet Saturday #7 - Mini cheese cake with pistachios and strawberries

This is the most simple quick and tasty recipe to impress your guests. They are going to beg you for the recipe. 


100 gr. cookies (i use Lotus cookies)

50 gr. brown sugar

100 gr. melted butter

240 gr. sour cream

25 gr. sugar

 half a teaspoon vanilla essence

200 gr. strawberries

a handful pistachios, almonds or pecan nuts



Preheat the oven to 160 degrees celsius.

Mix the cookies, the brown sugar and the butter. Butter a muffins pan and cover about one forth of each hollow with it. Make sure it is compact.

Mix the sour cream, the sugar and the vanilla essence in a bowl. Pour it in the muffins pan.

Put in the oven and cook for 15 minutes. Take it out and let it cool down. Then put it in the fridge and let it cool for several hours.

Take a knife and very carefully cut around the cheese cakes in the pan in order to get them detached. Now this part is a bit tricky so take your time, don't rush. Cover the pan except for two mini cheese cakes. Flip the pan and let the mini cheese cakes slide on the plates. Repeat the step. 

Cut strawberries in small pieces and place them around the cheesecake. Drop some pistachios on the top.
